Traditionally, The Dupont family of Pays dAuge (a part of Normandy) were, as most of their neighbours, farmers of things like beef and cereals, and would make calvados (apple liqueur) as a liquid asset for when times were tough financially. With the succession of Etienne Dupont in 1980, their older orchids were given a facelift, and an additional ten acres planted. Today the domain has about 27 hectares of orchard with all the varieties required to make award winning traditional ciders and calvados. Their soil is mainly marls and marly chalks, producing fruits with low yields that are rich and complex, allowing them to produce a large range of traditional and innovative products.
Tasting Notes:
Primary fermentation is done with native yeasts, and secondary fermentation (bottle conditioning) with carefully selected yeast. The beer is naturally conditioned, and degorged inMéthodeChampagnoise for a bright presentation. Appearance is coppery yellow, and the foam is very thin and permanent.Elegant fresh aromas of green apple, caramel and citrus fruit aromas dominate the nose. The flavour is delicate, fresh, fruity and slightly acidic, with notes of acidic apples and pineapple. Autolysis (yeast cannibalism) adds some structure, roundness and complexity.
Cuvée Colette can be served as an aperitif or with apple desserts.
The Cuvée is 75% bitter-sweet apples (Binet Rouge and Frequin), and 25% acid apples (Judeline and Petit Jaune).
