Characterized by its hoppy fruity raisin like aroma and complementary bitter flavours, Chimay White is a classic Blonde Abbey Style Tripel Ale. Chimay White is brewed by one of only seven breweries in the world officially entitled to call themselves an “Authentic Trappiste Breweries”. Since 1862 the Trappiste monks of the Chimay Abbey in have been brewing Chimay ale combining the artesian water of Chimay Abbey with the fine barley malt and aromatic blend of hops and Chimay’s uniquely cultivated yeast. Top fermentation gives Chimay a distinctive fruitiness of flavour. Fresh yeast is added just prior to bottling resulting in a slight sediment which you can see. This secondary fermentation in the bottle adds to the ale’s richness and body. The Trappiste fathers of Chimay use exclusively natural ingredients. This product has neither been pasteurized nor filtered. Serving suggestions: To fully appreciate Chimay’s aroma and flavour, serve lightly chilled in a wide mouthed glass.
Tasting Notes:
Pours a hazy gold colour with a fine bubbled large lasting off-white head. Complex aroma of barn yard yeast, wet hay fresh (apple and grapefruit) and dried fruit (raisins), and a grainy malt and spice. Flavour mirrors aroma with slightly less fruit and malt, and more yeast. Full bodied, balanced bitter- malty sweet start, with subtle hint of grapefruit in the finish and aftertaste.
