3 Monts is a classic Bière de Garde (which literally means "beer for aging or keeping") brewed by the brewery of St. Sylvestre(actually and old farmhouse) located in the heart of the French Flanders countryside. The beer, named after 3 small nearby hills on teh farm, is an old fashioned, full flavoured beer brewed from strong aromatic Flemish hops and fermented using top yeasts. The beer is similar to many farmhouse beers that were once brewed in iron hooped barrels in the district and delivered to the many small local Flanders bars. The aromatic bitterness also makes this beer highly suited for cellaring and will last for up to 20 years in a cool dark cellar with definite improvements possible after the first five or so years of storage.
Medium gold clearish under a large, very fine bubbled, creamy yellow white, very long lasting head. Head regenerates superbly on glass swirl. Aroma has hops and fainter spicy, something floral and a hint of cured meat yeastiness, and that celery chicken noodle soup thing you get in some Belgians. Lightly fruity. Medium, less velvet more silky smooth, body. Lasting carbonation. Medium yeasty and fresh malty sweet flavours, nicely balanced between the bitter and sweet dimensions. Alcohol very well masked even when warm. Not as complex as some other Bière de Gardes or other complez but otherwise extremely pleasant drinking.

Brewed in the style of a traditional Belgian lambic, Haandbic is fermented with bacteria and various wild yeasts. The fermentation takes place in oak barrels, and lasts almost 18 months. Red currents and cranberries are added to the barrels to give flavour and colour. Softer and far more approachable then it’s Belgian brethren, Haandbic is funky, complex and highly refreshing!
